Riesling asks for only three things: sufficient acidity, a clear sense of place, and the quiet confidence to ignore anyone still asking whether it is sweet.
The right bottle can move from aperitif to table without changing clothes. Look for balance rather than a number on a sweetness scale, and buy from producers who seem more interested in vineyards than bottle weight. A useful wine need not arrive with a lecture.
